Vegan Almond Butter Chickpea Cookies

Not only are these cookies stuffed with flavour and protein, they are also vegan AND gluten free!

  • 1 14 oz can Chickpeas (drained & rinsed)
  • 1/2 cup Maple Syrup
  • 1 1/2 tsp Vanilla Extract
  • 1 cup Almond Butter
  • 1 1/2 tsp Baking Soda
  • 1 cup Chocolate Chips
  • 3/4 cup Pecans (crushed & roasted)
  1. Puree chickpeas, maple syrup and vanilla in a blender until smooth.
  2. Transfer mixture to a bowl and add almond butter and baking soda. Fold in with a spatula until incorporated.
  3. Add in chocolate chips and pecans, mix until combined.
  4. Scoop spoonfuls of dough onto parchment lined baking sheet. Bake at 350 degrees for 15 minutes. Cookies will firm as they cool, top with a sprinkle of coarse salt!
