Chocolate Almond Granola Bars

This granola bar recipe is the perfect treat when you’re looking for something sweet! The toasted coconut brings such good flavour along with the almond butter, and what is better than a chocolate drizzle to top it off?!

Although this is a “recipe”, there is no baking required and a lot of ingredients can be swapped. When making granola bars, I always throw in whatever I have in the pantry (dried fruit, nuts & seeds). These bars are also just as yummy without the chocolate drizzle if you’re looking to make them healthier.

  • Chocolate Drizzle

  • Place shredded coconut on baking sheet and cook on low until browned.
  • Mix shredded coconut, quick oats, slivered almonds, and sunflower seeds in a bowl. Set aside.
  • In a large bowl whisk almond butter, maple syrup, and vanilla extract.
  • Add dry ingredients to wet mixture in small portions, mix with hands until fully incorporated.
  • Line a 9x9 square baking pan with wax paper and place mixture in pan. Using your hands, push down on mixture until it becomes compact. Go over mixture with a spatula to get an even top layer.
  • Refrigerate over night, or until set. Cut into rectangles or preferred shape.
  • Chocolate Drizzle
  • Melt chocolate chips and coconut oil in microwave, mix until oil is incorporated. Drizzle mixture over granola bars and let chocolate set. Enjoy!
